Avocado Egg Toast

avocado egg toastThis is one of the simplest breakfasts that I make. It started with a jar of chipotle powder I had gotten almost two years ago, which I rarely used. Not sure what to put it in, the powder sat closed in my cabinet for months and the only time they made an appearance was when I used the round cap to trace out macarons on parchment paper for cookie-making.

One summer, when I was making guacamole, I tried some of the powder in the avocado and it tasted surprisingly good! The chipotle powder had a slightly spicy, burnt, tangy taste that flavored avocados deliciously without adding salt, pepper, and a host of other spices I would have otherwise used.

avocado egg toastSince then, I’ve used the entire jar of chipotle sauce on avocados, and this avocado toast is the tried-and-true product that I usually use avocados for. It’s just 5 ingredients: sourdough bread, an avocado, chipotle powder, egg, and pepper. And it takes 5 minute to make!

Since starting to study for boards, this has become the instant/fast/treat food when ramen seems a bit too unhealthy for the night. It’s a breakfast food, but I eat it for dinner too since it’s so quick and yummy.

avocado egg toastThe sunny-side-up egg can be made to be soft in the center or firm, depending your preference! Personally I like the egg to be slightly soft, so the egg yolk is runny when I bite in.

Avocado Egg Toast

Ingredients
  

  • 2 slices sourdough toast
  • 1 ripe avocado
  • 2 eggs
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon black pepper
  • Oil for frying eggs about 1/2 tablespoon

Instructions
 

  • Toast the bread in your toaster.
  • Meanwhile, peal and then mash the avocado with either 2 forks or a pie cutter. Add chipotle powder to the avocado, and stir till well combined.
  • Add 1/2 tablespoon oil to a pan, and crack the 2 eggs into the pan. Sprinkle black pepper on the eggs.
  • Cover and let heat on medium-high heat for about 3 minutes to have a slightly runny center. Heat for additional 1-2 minutes for a harder center.
  • Smear avocado onto the toasted bread, and top with fried egg. Enjoy!

Nice! I tried this this morning, as I had all of the ingredients ready, and it was yummy. I wouldn’t have thought to use chipotle powder, which I have from a recipe once but rarely use. It was nice!

I’ve been on an avocado kick lately – this looks amazing Sarah. I also have a zillion random jars of spices which I discover belatedly then become obsessed too. BTW, I rec trying adding cayenne pepper to avocados and eggs <3

YUM!! Chipotle powder sounds delicious! That avocado spread and egg looks incredible. Nothing better than runny egg yolk :p Loving your quick and easy recipes!!

I totally LOLed at the way you first used your chipotle powdered.

Oooh, now this is my type of breakfast / dinner!! I have this more often than I realise 🙂 It’s such a fast, satisfying meal!! (PS I’m adding a pinch of chipotle next time I have it! )
