Chocolate Cupcakes

The cupcakes look like they are looking at each other ^ and are supposed to be eyes and not poop! They were for ophthalmology clinic to celebrate end of fellowship for the outgoing fellows. A few years ago when I was doing my colorectal surgery rotation as an intern I wanted to make the poop emoticon version of this with the smiling mouth too for colorectal clinic, but never got to it. Fun fact, one of the colorectal attending physicians used a dancing poop emoticon in his lecture slides 🙂 I wish I could go back in time and have made these for the colorectal clinics too (but with a fondant mouth).

Just wanted to share some images for chocolate cupcakes I made recently 🙂 These cupcakes have dairy in them, and the recipe is from Sally’s Baking Addiction Blog. Stump recipe is here, and frosting recipe is here. The only modification I made was I added half the called for amount of vanilla in the frosting recipe. Overall the consistency of the frosting is very workable, pipes easy and holds shape great. I brought these to clinic, and they held shape throughout a 6 hr day sitting by a window (no direct sunlight, shades on).
